For anyone else that updated and found that Playnight can no longer launch games via PCSX2 with an error that the emulator cannot be found, you will need to go into Menu > Library > Configure Emulators. From there, select your PCSX2 configuration, remove the existing profile, and replace it with 'Default 32bit.' For good measure, you may want to check that the play action in each of your PS2 games is updated to the 'Default 32bit' profile.
Your PS2 games should now be able to launch, but there will still be a notification in the top of your Playnite window that the emulator is not found. To fix that, go to Menu > Library > Configure Emulators again, but this time go to the second tab for "Auto-scan configurations." Update the emulator and profile listed in your library scanner to PSCX2 and Default 32bit as well. Then, go to Menu > Update Game Library > Update Emulated Folders and select your PS2 scanner. This will force Playnite to rescan the folder for games as well as the emulator itself, which should get rid of that notification.
